Day 1
Arrival at the Relais & Châteaux - Il Falconiere, check-in,
welcome cocktail with Silvia & Riccardo Baracchi, your hosts
for the week. You will meet the Chef Richard Titi and the whole
Staff of the Relais Il Falconiere. An aperitif will be followed
by a delicious Tuscan meal. |

Day 2
After breakfast, cooking class: “Amusing cooking with a
bit of fantasy.” Lunch your creations accompanied by the
finest Tuscan wines. Afternoon at leisure and dinner on your own. |

Day 3
In the morning a sightseeing tour of Cortona visiting the Etruscan
Academy Museum, the Etruscan graves and discover the mystical
atmosphere of the monastery “Le Celle.” Lunch in a
typical tavern and then back to the Relais in time for a cooking
session: “Along Etruscan Traces.” Dinner, tasting
your own prepared dishes along with a selection of delicious Tuscan
wines. |

Day 4
After breakfast an excursion to Pienza and Montepulciano, in southern
Tuscany’s fine wine country. Lunch and wine tasting in a
Montepulciano cellar. Return to the hotel and in the evening you
will have a traditional meal in the home of a typical family in
Cortona. |

Day 5
Breakfast and morning at leisure. In the afternoon a short drive
to a typical Tuscan restaurant formerly an old mill for: “The
Joys of Home Life” cooking class, which will show you how
to make home-made pasta and olive oil dishes, following old Tuscan
traditions. |

Day 6
After breakfast, you will venture to Assisi where you will enjoy
a walking tour of the city. Enjoy free time for shopping in Deruta,
famous for its ceramics. After a lunch, it is back to the hotel
for your last culinary lesson: “The Fish and its Secrets.”
Farewell candlelight dinner at Il Falconiere and presentation
of certificates. |

Day 7
Breakfast and departure. |

Classes are limited to 14 people
and are hands-on, with lessons concentrating on the successive
stages of a meal. Courses will be conducted by Titi Richard, chef
of the Relais Il Falconiere and by Silvia Regi, owner and professional
sommelier. Together they will teach the history and traditional
Tuscan techniques of cooking. The owner, Mr Riccardo Baracchi,
will personally take care of the program in order to guarantee
a pleasant stay.
